Weeknight Pizza

Let's be honest, even quick pizza doughs take too long to make most weeknights. What's the busy pizza-craving home cook to do? Spend your time making incredible toppings. In this class, we'll focus on bold, crunchy, cheesy, gooey options with surprising flavors and quick techniques like Roasted Eggplant with Za'atar and Feta; Spicy Garlic and Herb, White Pizza with Arugula; Roasted Mushrooms with Fontina and Scallion; and Ciccio, a new take on calzone.

What about the pizza part? We'll talk about different options: how to doctor good store bought dough; substitute socca, a chickpea flour flatbread that comes together in five minutes; and make and freeze our perfect pizza dough, a project well worth the time when you have it.

This is a hands-on cooking class led by Milk Street instructor and cast member Catherine Smart.
